Sweet potato oven mash
An autumn mash with a twist. This sweet potato stew gets an extra layer of melted mozzarella from the Outdoor oven. Stoke up the fire and make this easy-to-prepare mash this fall.
Ingredients:
8 large sweet potatoes
2 large winter carrots
2 red onions
Olive oil
1 tbsp ras el hanout
Bag of mini mozzarella
Fresh spinach or arugula
Handful of nut and seed mix
Supplies
Potato masher
Potato peeler
Oven Dish
Preparation
Peel the sweet potatoes and cut them into pieces
Cut the winter carrots into pieces as well
Place the sweet potato and winter carrot pieces together with a layer of water in the deep part of the Oven Dish and bake in the Outdooroven until both are soft enough to mash.
Make a mash of the sweet potatoes and carrots.
Cut the onions into thin rings.
Put some olive oil in the shallow end of the Oven Dish, add the onion rings and heat briefly on the grill over the fire. Let the ras el hanout cook with them for the last 2 minutes.
Add the onions to the stew in the deep part of the Oven Dish and mix together.
Spread the mini mozzarella over the stew and place in the Outdoor oven until the mozzarella is melted.
Garnish with some spinach or arugula leaves and with the (toasted) nuts and seeds.
