Outdooroven recipe: Tarte Tatin
A piece of pie will make everyone happy! This classic tart is a French kitchen specialty. It’s also been called the upside-down apple pie because it was made “by mistake”. This recipe is not only delicious, but also easy to make in the Outdooroven.
Ingredients
- 150g wheat flour
- 125g unsalted butter
- 1 pinch of salt
- 150g granulated sugar
- 3 tbsp ice-cold water
- 6 (mildly sweet) apples
Step 1: light a fire in the Outdooroven and let it heat up until it reaches 200 degrees Celsius. Sift the flour into a bowl. Take 100 grams of the cold butter and add to the flour. Then cut the butter into smaller pieces with two knifes. Next, add the salt, half of the sugar and water to the bowl. Knead the mixture, with cold hands, until you have a firm dough. Roll it into a ball and wrap it in foil. Put the ball of dough into the fridge and let it rest for 1 hour.
Step 2: Peel the apples, cut them into quarters and remove the core. Place the remaining butter and sugar in a pan and warm together on low heat. Turn off the heat when the mixture turns light brown. In the meantime, divide the pieces of apple over the tart mold with the rounded side down. Then pour the caramel mixture over the apples in the mold. Be careful of the hot caramel!
Step 3: Take the dough out of the fridge. Cover your workspace with some flour so you can roll out the dough easily. Roll out into a round shape that is a little wider than your tart mold. After you rolled it out, place it over the apples in the mold. Fold the sides around the apples and press down gently.
Step 4: Place your tart into the Outdooroven. Let it bake for around 20 minutes until its done and has a light brown color. When that’s done, you can take your tart out of the oven and let in cool down for around 5 minutes.
Step 5: Place a big plate over the top of the Tarte Tatin, turn the whole thing upside down and enjoy! It’s delicious as it is, but you can also serve it with crème fraiche or with a scoop of ice cream.
