Puff pastry wrapped cranberry camember

Puff pastry wrapped cranberry camembert 

  • 1 camembert 
  • 1 roll of puff pastry 34cm x 26cm 
  • 3 tablespoons cranberry jam 
  • 1 handful of nuts 
  • extra (nut) bread for dipping 

Needed for the egg wash:
  • 1 egg 
  • 1 tablespoon water 

Heat the Weltevree outdooroven. Roll the puff pastry on a piece of baking paper and place the camembert in the center of the roll. Scoop the jam on top and sprinkle with a handful of nuts. Fold the puff pastry and make a nice package. Whisk the egg and include a tablespoon of water, with a pinch of salt and mix for the perfect egg wash. Now brush the puff pastry with the eggwash. The camembert can go into the oven. Bake the package - on the baking sheet - in 30 minutes until it's golden brown, crispy on the outside and deliciously melted on the inside. Check regularly and turn the package half a turn. Serve the camembert in puff pastry immediately and serve with extra bread for dipping.

Flaked tikka masala pointed cabbage with whipped feta cheese 

  • 1 (organic) pointed cabbage, outer leaves removed 
  • 3 tablespoons tikka masala spice paste (or other curry paste you already have in the house) 
  • 2 tablespoons olive oil puffed quinoa (available at larger supermarkets) 
  • small bunch of fresh cilantro, finely chopped 

Needed for the whipped feta;
  • 200 g feta cheese (or white cheese) 
  • 80 ml water 
  • 1 tablespoon olive oil 
  • 1⁄2 organic lemon, grater 

Heat the Weltevree outdooroven. Cut the pointed cabbage into quarters. Mix the tikka massala with the olive oil and rub the quarters of pointed cabbage all over with this marinade. 

Meanwhile, make the whipped feta. To do this, use a handblender to mix the feta or white cheese with water, the grated zest of one lemon and a tablespoon of olive oil into a creamy sauce. You can very well prepare the pointed cabbage and the whipped feta beforehand. 

Roast the pointed cabbage ± 30 minutes, on baking paper, in the oven part of the preheated outdooroven until well browned and cooked. 

Serve the charred pointed cabbage warm and spread one half with the whipped feta (as you see in the photo), sprinkle the puffed quinoa and some chopped cilantro on top.

Black cod 'Nobu Style' with crispy lentils 

  • 800 grams cod fillet 
  • 400 grams lentils (drained weight) 
  • 2 shallots, cut into thin rings 

Necessary for the marinade

  • 40 ml soy sauce
  • 40 ml soy sauce 
  • 4 tablespoons hoisin sauce 
  • 4 tablespoons honey 
  • 2 tablespoons sambal 

For the topping 
  • Small bunch of fresh cilantro, finely chopped 
  • Japanese mayonnaise 

Heat the Weltevree outdooroven. Mix all the ingredients for the marinade well and place the cod fillet in the marinade. Place the cod fillet covered in the refrigerator for at least 20 minutes to allow the marinade to soak in. You can also do this longer in advance. 

Use an oven dish that fits in the outdooroven. Cut the shallots and lentils into ring and put them in the ovendish. Place the cod fillet on top and pour the marinade on it. Bake the cod fillet for 15 to 20 minutes in the outdooroven until it is done and the slats fall apart just a bit. Add the lentils into pretty, deep plates; place a piece of cod fillet on each plate. Serve with extra sauce, some Japanese mayonnaise and some chopped cilantro to taste.

Chocolate Pinecones 

Make it nice and easy for yourselves during the holidays, with a great result. These chocolate pine cones are very easy to make and even kids can do it themselves! So fun and cozy when they help out. I make it's easy with a baking mix for brownies but of course you can also bake brownies on your own recipe. 

  • 1 pack of baking mix brownies (+ the ingredients you need for this according to the package), or your favorite own recipe
  • 1 pack of Kellog's chocos (shell model) 
  • Powdered sugar, to taste 
  • optional: vanilla ice cream 

Heat the Weltevree outdooroven. Bake the brownie - in the Weltevree outdooroven - according to the instructions on the package. Remove the brownie from the baking pan and cut the brownie into 4 pieces. Remove the crunchy top of the brownie, you can taste those already! Shape (knead) the 4 pieces of brownie into the shape of a pine cone (cone-shaped) and press the chocolate shells into it so that they become pine cones. Place the chocolate pine cones on a plate and sprinkle with powdered sugar. 

Serve with a scoop of vanilla ice cream!
